Pasta Carbonara (That’s Italian for “Breakfast for Dinner”)

On Monday evening we were all worn out from the holiday festivities and the first day back to reality. We just wanted comfort food – and not in the form of leftovers.

Our out-of-town visitors had left that morning, but not without filling my fridge with about 4 dozen fresh chicken eggs. And there was also packet of pepper bacon I had forgotten to use over the weekend.

I always know I should have cleansing food and drink after the extravagance like the weekend past, but sometimes it’s best not to be too severe too soon. With it’s gentle simplicity, this cozy pasta dish had a way of softly easing us back down to earth.

When I posted a snapshot of my plate on Facebook that evening, everyone started to talk about being hungry. The next time you need a plate of comfort that isn’t too humble, whip yourself up a bowl of Pasta Carbonara. The best kind of “Breakfast for Dinner”.
